Today I propose to make Tiramisu, a very light and delicate Italian dessert,

The classic Tiramisu recipe uses chicken eggs. If you're afraid to use raw eggs, you can replace them with quail eggs (they're not susceptible to salmonella).


Ingredients

4 eggs (I used 18 quail eggs)

100g sugar

500g mascarpone

250g "Savoyardi" cookies (approx. 34 pieces)

350 ml coffee (instant or brewed)

cocoa powder

2-3 tbsp. of Marsala wine (or any other), or rum, liqueur, brandy, cognac - as desired


Preparing



Separate the whites from the yolks.
Crush the yolks with the sugar.



Add the mascarpone.
Stir.



Whites whipped into a stiff foam.



Add the whites to the egg-cheese mixture.
Stir gently.



Dip the chopsticks into the cold coffee.
Dip the sticks very quickly, so that they do not get soaked.
Prepare the coffee as you like (I added 4 tsp of coffee per 350 ml).
If desired, you can add wine, rum, liquor, brandy, or cognac to the coffee.



In a mold (I used a 17×25 cm mold) densely place sticks soaked in coffee.



Place half of the cream on the sticks.
Flatten out.



Place the sticks soaked in coffee back on top of the cream.



Place the remaining cream on the sticks.
Smooth it out.
Place in the refrigerator for 5 to 6 hours.



Sprinkle with cocoa through a sieve.

Cut into portions.
Cut very carefully, as the dessert is very delicate.
